Pasta With Tomatoes, Mozzarella & Basil
This simple Italian style pasta dish is easy and inexpensive to make. Great for summertime when tomatoes are at their most ripe. Makes 4 - 6 servings.
2 lbs fresh tomatoes, diced small
1 bunch fresh basil leaves, julienned
1 large clove garlic, minced (or pressed)
4 oz fresh mozzarella cheese or soft teleme, cut into 1/4" pieces
1/2 teaspoon red pepper flakes
1/4 cup extra virgin olive oil
salt and pepper to taste
1 lb penne pasta
1 cup fresh Parmesan cheese, grated
Place all ingredients except pasta and Parmesan cheese in a large bowl. Cover and let sit at room temperature for 2 hours. Bring a large pot of water to boil. Add pasta. A bit of olive oil in the water will keep the pot from boiling over. Salt water lightly if you choose. Cook, uncovered until pasta is just tender (al dente). Drain and immediately mix with fresh sauce. Serve at once, topped with grated Parmesan cheese.
Goes great with Italian Garlic Bread.
