Mexican Guacamole
This fast and fun avocado dip goes great with your favorite tortilla chips and blended margaritas. Avocados are best in the Spring, but can easily be found all year.

Ingredients
4 ripe avocadoes
1/2 small red onion, finely chopped
5 tablespoons medium or hot salsa
5 tablespoons sour cream (fat free)
1 lemon, juiced
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper (or to taste)
1/2 teaspoon Mexican seasoning
Tabasco sauce, a dash optional

Directions
Mash avocados in medium bowl, add finely diced onion and about 5 tablespoons of salsa of your temperature choice. Add 5 heaping tablespoons of sour cream. Remove seeds from lemon and squeeze 1/2 of lemon juice into mixture. Add the next 3 spices to taste. Mix together well. Sprinkle top with lemon to preserve and keep the color. Place a hefty dollop on quesadillas or with tortilla chips as a dip.
