Spicy Baked Onions
The best onions to use for this dish are sweeter varieties like Walla Walla or Maui. Check with your local grocer to see what's in season. Cloves and nutmeg are the secret ingredients that bring this dish to life - and add a spicy perfume to the kitchen! Makes 4 servings.

Ingredients
2 large onions (red or yellow)
Marinade:
1/2 cup balsamic vinegar
2 tablespoons dark brown sugar
1 pinch of freshly grated nutmeg
1 pinch of powdered cloves

Directions
Preheat oven to 350 degrees.

Peel and slice onions into 1/4" slices. (Best seasonal onions are Walla Wallas or Maui). Grease a cookie sheet with a bit of olive oil. Place onion slices side-by-side until the pan is filled. Place onions in the 350 degree oven for about 20 minutes. Check periodically to be sure they don't get too brown. While onions are cooking, mix the marinade.

Marinade:
Whisk all above ingredients together and at the perfect moment, remove the onions from the oven. Pour the vinegar mixture over the onion slices. Sprinkle with a touch of powdered cloves. Return the onions to the oven for an additional 10 minutes to finish.
