There’s something in the air in the southern corner of Wisconsin. One sniff and you know you’re in "cheese country" where specialty varieties are coming on strong—especially the notoriously pungent Limburger. And the Chalet Cheese Cooperative is the only factory left in the United States that makes it.

The Wisconsin master Cheesemaker program was created through joint partnership with the Wisconsin Center for Dairy Research, University of Wisconsin-Extension and the Wisconsin Milk marketing Board.

Participants in the program don’t just learn how to make cheese, they also learn how to market and sell and how to work with people

Limburger Cheese—Limburger originated in Limburg Belgium. First made in the U.S. in new York State, then made in Wisconsin in the late 1800’s. Traditionally Limburger is eaten on dark bread like Rye, with onion slices, mustard and a cold beer.

Feta—Traditional European Feta is made with sheep or goat’s milk. Klondike uses cow’s milk
