Cheesy Broccoli Soup
An insides-warming treat for any cold weather day, this soup can be served in a bread bowl as a main course or on the side with a carved turkey sandwich. This microwave version saves on cook time – ideal for a quick weekend meal. Makes 4 to 5 servings
Ingredients
Fresh broccoli pieces
1 med. onion, quartered
1 (14 1/2 oz.) can chicken broth
1 c. milk
2 tbsp. flour
Dash pepper
1/4 c. Velveeta cheese
Directions
Combine broccoli, onion, half of chicken broth and the seasoning in 2 quart glass mix 'n pour bowl. Cover with plastic wrap.
Microwave (High) 8 to 9 minutes or until broccoli is tender. Let stand 5 minutes. Pour mixture into blender or food processor container. Cover and process at medium speed until smooth. Return mixture to a bowl with lip for pouring. Combine milk and flour until smooth. Blend into hot vegetable mixture. Add pepper.
Microwave (High), uncovered 3 to 4 minutes or until mixture boils and thickens, stirring twice. Stir in cheese until blended. Mix in remaining chicken broth. Cover and refrigerate until chilled.
