Walnut Bread Pudding with Brandy Sauce
Bread Pudding
Soak egg bread with:
4 # diced egg bread
2 cups cream
1 pinch cinnamon
1 pinch nutmeg
Make butter cream:
4 egg yolks
3 oz sugar
4 oz butter
Beat Together:
4 egg whites
3 oz. sugar
½ cup walnuts
Brandy Sauce
½ cup cream
½ cup milk
2 oz sugar
1 t vanilla
2 egg yolks
¼ cup brandy
Directions:
Whip until light. Temper with cream. Cook in double boiler until thick.
Fold altogether and bake in individual cups in a water bath for 20-30 minutes or until solid on top.
Cool and unmold and serve with brandy sauce.
