Tomato - Herb Cheese Ball
The secret ingredient for this special appetizer is the pine nuts. Be sure to lightly toast the nuts before coating the cheese ball.

Ingredients
8 oz sun-dried tomatoes (in a package)
1/2 tablespoon fresh basil, chopped
1/2 tablespoon fresh oregano, chopped
1 teaspoon fresh rosemary, chopped
1 green onion, finely chopped
4 cloves garlic, finely chopped (or pressed)
2 8 oz packages of fat free cream cheese
2/3 cup pine nuts

Directions
Soak the sun-dried tomatoes in water for five minutes and then drain. Place tomatoes in blender or food processor and chop into small pieces (do not puree). Set aside. Next, chop by hand the basil, oregano, rosemary, green onion and garlic.

Mix all of the above ingredients with two packages of softened cream cheese. Stir until all ingredients are combined. Form the mixture into two equal sized balls and wrap them in plastic wrap. Chill for an hour. Remove balls from plastic wrap. Coat each ball with lightly toasted pine nuts and place on a serving plate surrounded with a variety of crackers.
