Ingredients
 1 package (10 oz) frozen cauliflower* (or 1 medium cauliflower head)
 2 tbsp low fat milk
 1 tsp instant chicken bouillon
 ¼ tsp butter flavored salt (Butter Buds)
 dash of freshly ground pepper
 salt to taste
 a whisper of freshly ground nutmeg

Place cauliflower in a 1 quart casserole dish. Cover with plastic wrap. Microwave on high for 8 to 10 minutes or until the cauliflower is very tender. Drain off water. Place in a food processor. Add milk a bit at a time so the puree doesn't become too liquid. Then add the bouillon, butter substitute and pepper. Blend until smooth, three to five minutes. Taste, then add salt if needed. You may want to serve with a low fat brown gravy.
