Fruit Salsa

Ingredients
1 tablespoon rice wine vinegar
1 tablespoon apple cider vinegar
1 tablespoon water
2 teaspoons granulated sugar
2 tablespoons red onion, coarsely diced
1 each fresh ripe plum, nectarine and peach, pit and dice
1 green onion, thinly sliced
1 firm, ripe Roma tomato, peeled, seeded and finely diced
1/2 teaspoon red pepper flakes
salt and pepper to taste

Directions
Combine vinegar, water and sugar in a saucepan and bring to a boil, stirring until the sugar is all dissolved. Add onion and return to boil. Remove from heat and let stand for about 10 minutes. Drain onion, reserving brine. Let cool. In a small mixing bowl, combine pickled onion, fruit, green onion, tomato and 1 1/2 tablespoons of the brine. Sprinkle with red pepper flakes. Salt and pepper to taste. Refrigerate before using.
