Ingredients
 1 pasilla pepper
 ¼ medium sized onion per serving
 Queso Fresco Mexican cheese
Optional
 garlic if desired.

Heat up olive oil and garlic until sizzling, throw in rough cut chunks of pasilla peppers with seeds and stems removed. Cook with onion. Turn down heat and sauté on low to medium heat for about 30 minutes, stirring often, until the peppers and onions begin to get very soft. Add some crumbled Queso Fresco until your reach your desired consistency. Serve on warm, fresh corn tortillas, add hot sauce to taste. If Queso Fresco is not available in your area, some people like to substitute mild Feta cheese
