Wisconsin’s Baerwolf brothers are taking two different paths when it comes to running their Sassy Cow Creamery. They’ve discovered that some of their customers want organic milk while others want traditional dairy products. To meet both demands, they’ve divided their dairy herd in two.

James Baerwolf says the arrangement has allowed them to offer additional ice cream and cheese products tailored to the individual markets. Setting their milk products apart, customers will find “trading cards” on each bottle with a picture of one of the Baerwolf dairy cows.
