When Rouses Supermarket in the heart of New Orleans says their lettuce and herbs are fresh, they mean they’ve been brought inside from the roof of the store less than 90 feet away. Most amazing, they’ve been grown in plant towers that don’t use dirt.

Rouses uses aeroponic towers that mix fertilizer with water – dropping the mixture onto the roots of plants nestled in holes all along the plastic columns. The towers are the work of two young Louisiana entrepreneurs, who say their growing method is another approach to improving agricultural output.
