In the Mid South, researchers are finding that kudzu and goats are a match made in....Kentucky! While goat meat consumption is on the rise in the U.S., so are livestock feed prices. So the University of Kentucky is working with ranchers to "repurpose" the invasive Kudzu - turning it into a tasty treat for foraging goats. No cost feed for the herd, and the eradication of a once pesky plant. Kidding aside, it's a win-win situation.
