It started as a hobby and a way to capture and enjoy aquatic delicacies. But for one family, crawfish are now a commercial enterprise and a successful one at that, turning crustaceans into cash cows.

Crayfish (or crawfish) are vegetarians! Fishermen say a little vegetable matter combined with some fish oil is all it takes to lure them into their traps.

There are more than 500 species of crawfish worldwide, but only two that are raised and harvested in Louisiana.

Here’s the quick way boil crawfish:

  • add seasoning to water and bring the pot to a full boil;
  • add the crawfish and bring back to a boil;
  • let boil for about 20-25 minutes;
  • turn off heat and let seasoning soak into the crawfish;
  • drain and serve. Good traditional side dishes include corn, potatoes, and cold beer!
